I may be the only person to be in India for three months and not get 'tourista' and gain weight. A few weeks ago we made a pact that we would only cook three dishes per dinner. Shortly thereafter we learned to make chapati correctly and have streamline the whole process. Chapati and one dish is plenty. I plan to impress my friends with my chapati technique when I return!
